About the Authors
Duncan Glendinning and Patrick Ryan met in Fiji, on the Tribewanted sustainable tourism project. A trained chef who has worked at Michelin-starred restaurants, Patrick brings his expertise and passion to The Thoughtful Bread Company, developing its prize-winning recipes. Duncan, the company’s founder, was determined to set up an ethical, environmentally aware business, and realised the potential of bread to reach and inspire a wide range of people.
Duncan has been named a Food Hero in the Good Housekeeping Food Awards and he and Patrick were shortlisted for the BCE Environmental Leadership Awards for their green approach and use of organic, local and foraged ingredients.
